India

Mango Lassi Ingredients 1 cup frozen mango chunks, 1 6 oz. vanilla coconut milk yogurt, 2 cups coconut milk, 1 tsp liquid sweetener such as agave maple syrup blend (optional), 1 to 2 pinches of cardamom powder, juice from 1/2 squeezed lemon, fresh mint for garnish (optional) Blend all ingredients together until smooth. Garnish with fresh mint if you like. Red Lentil Dal Ingredients 1 cup red split lentils, 2 1/2 cups vegetable broth, 1 tsp curry powder, 1/4 tsp coriander powder, 1/4 tsp cumin, 1/4 tsp turmeric, juice from 1 lime, cilantro for garnish (optional) Bring the vegetable broth to a boil and add the lentils. Cook for about 10 minutes or until lentils are soft.Stir in the spices and lime juice and garnish with fresh cilantro if you like. Aloo Gobi Ingredients 3 potatoes peeled and chopped into small chunks, 1 head cauliflower chopped into small pieces, 1 tsp coriander, 1 tsp cumin, 1/2 tsp turmeric, 1/4 tsp grated ginger, 3 tbsp vegetable broth, 1 tbsp lemon juice In a skillet, sauté the potatoes in the vegetable broth about 10 minutes until soft. Add more vegetable broth as needed if potatoes stick. Add the cauliflower and cook about another 5 minutes. Add the spices and the lemon juice and stir to combine. Serve and enjoy! Thailand

Tofu Satay Ingredients: Baked tofu, 1 in. ginger grated, 2 garlic cloves, 2 tsp soy sauce low sodium, 1 tsp sesame oil, 1 tsp lime juice, 1 cup pineapple chopped into 1 in. cubes, cherry tomatoes Mix all ingredients except the tofu together to make the marinade. Add chopped tofu and marinate for up to overnight. Next, on skewers thread the tofu, pineapple, and cherry tomatoes. You could add cucumber slices if you wanted to, like I did here when I made these for a party. Mango Banana Smoothie Ingredients 1 cup frozen mango chunks, 2 bananas, 3 cups coconut water. Place all ingredients in blender and blend until smooth.
