Mango Lassi
Ingredients
1 cup frozen mango chunks, 1 6 oz. vanilla coconut milk yogurt, 2 cups coconut milk, 1 tsp liquid sweetener such as agave maple syrup blend (optional), 1 to 2 pinches of cardamom powder, juice from 1/2 squeezed lemon, fresh mint for garnish (optional)
Blend all ingredients together until smooth. Garnish with fresh mint if you like.
Red Lentil Dal
Ingredients
1 cup red split lentils, 2 1/2 cups vegetable broth, 1 tsp curry powder, 1/4 tsp coriander powder, 1/4 tsp cumin, 1/4 tsp turmeric, juice from 1 lime, cilantro for garnish (optional)
Bring the vegetable broth to a boil and add the lentils. Cook for about 10 minutes or until lentils are soft.Stir in the spices and lime juice and garnish with fresh cilantro if you like.
Aloo Gobi
Ingredients
3 potatoes peeled and chopped into small chunks, 1 head cauliflower chopped into small pieces, 1 tsp coriander, 1 tsp cumin, 1/2 tsp turmeric, 1/4 tsp grated ginger, 3 tbsp vegetable broth, 1 tbsp lemon juice
In a skillet, sauté the potatoes in the vegetable broth about 10 minutes until soft. Add more vegetable broth as needed if potatoes stick. Add the cauliflower and cook about another 5 minutes. Add the spices and the lemon juice and stir to combine. Serve and enjoy!
